This coffee was floated to remove defects and then pulped immediately. It then fermented without water for just 16 hours. It was washed the next day and dried in a deliberately slow process involving three rest periods on days 5, 9, and 13, for a total of 15 days. This extended drying time protects volatile aromatics. As a reaction to the increasing complexity around novel processing techniques, Jorge has opted for a more traditional method with this coffee.
